Lemon Chicken with Pea Pods

Would you like a quick, easy dinner recipe that will have your family eating healthy and reaching for more at the same time? This one has just a handful of ingredients – chicken, pea pods, Eureka Lemon Fused Olive Oil, and salt to taste. It is actually that simple! Heat up some of the oil in a pan and sear your chicken (breasts or thighs—your preference) for a couple minutes until brown.

 Remove chicken from the pan, add a little more oil, then throw in the pea pods and lower the heat. Once they’ve cooked for a few minutes, throw the chicken back in and let it all finish cooking together. Season it with salt to your preference, and serve it up. Add a side of steamed rice, or keep it low-carb with just the protein and veggies. Voila, dinner is served!




  1. Heat a heavy skillet over medium-high heat and add 2 tablespoons of Eureka Lemon Olive Oil to the hot pan. Sear the chicken breasts for 1-2 minutes per side to brown, then remove.
  2. Add the remaining 2 tablespoons of Eureka Lemon Olive Oil and the vegetables to the hot skillet. Lower the heat to medium-low and cook them until just beginning to soften, about 4 minutes.
  3. Add the chicken back to the skillet with the vegetables and cook until chicken is cooked through. This will take 5-10 minutes depending on the thickness of the chicken.
