Espresso Balsamic Sundae

How to make a grown-up ice cream sundae. Put two cups of espresso balsamic vinegar in a small saucepan on the stove. Stir in ½ cup of brown sugar. Bring this mixture to a simmer until it reduces by about half (20 minutes or so). You now have an explosively flavored, utterly addictive espresso balsamic glaze. Try not to just eat it on a spoon—it really does go well over a number of foods.

Dish yourself up some vanilla ice cream (preferably homemade…). Drizzle your espresso balsamic glaze over the ice cream. Top it with sliced strawberries and chopped basil. Do NOT invite the children to share in this! This glaze is also delicious on roasted chicken, grilled steak, and grilled pineapple. You can even toss a little with a cold pasta, mushroom, bell pepper, sharp cheese salad. Get creative!

  1. Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved.
  2. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon.
  3. Let cool and pour into a jar with a lid; store in refrigerator.
